And one of the greatest joys of this everyday life is eating – and sometimes cooking. Here’s a recipe for a tasty purple pizza that works for anyone who tries to be healthy and/or vegetarian. Cheese lovers won’t be disappointed either.
Eggplant Pizza: Ingredients
- 1 eggplant
- 1 red onion
- A few mushrooms
- 1 tomato
This makes approximately 8 small pizzas. All you need to do is slice all the ingredients and pile them on each other. Pre-heat the oven and once it’s warm enough you put your pizzas on a tray and into the oven they go. They are ready once the cheese has melted. Serve with a salad or something more substantial like meatballs.
