Say hi to Eila! She’s my mother and she knows how to make an absolutely amazing creamy salmon soup. This delicacy is one of the cornerstones of Finnish cuisine and it’s something we usually serve our guests. Not only is the soup very tasty, but it’s also very easy to make. Additionally, this is the perfect way of adding some fish to your diet. I personally find it really difficult to eat enough fish (even though I like it), so I was very happy when I was treated to this delicacy.
In Finnish, the soup is called lohikeitto. In Swedish it is laxsoppa. This is the perfect dish if you are expecting a lot of people for dinner. For a Finnish touch, enjoy the soup with a piece of dark bread or a typically Finnish Karelian pasty.
Eila’s Creamy Salmon Soup: Ingredients
Let’s begin with a list of the ingredients you need for making this delicious soup. This is what you need for serving ten people or so.
- 2 kg fresh or frozen salmon cubes
- Smoked salmon
- 10 potatoes
- 1 carrot
- Green beans (frozen)
- 500 ml heavy cream
- Finely chopped dill
- Salt and pepper
Salmon Soup: This Is How You Make It
The great thing about soup is that it’s so easy to make. Here are the steps for making this fantastic salmon soup.
- Boil water + stock cube
- Toss the spices, the leek, and the carrot into the water
- Boil for a few minutes before adding the potatoes
- Let boil for 10 more minutes
- Add the salmon, the beans, the cream, and the salt
- Let all the ingredients simmer for five more minutes
- Before serving, add the dill
Now you can feed all your hungry guests. In the case of leftovers, rest assured. This soup tastes great the next day, so you will have your lunch covered. It goes very nicely with bread, butter, and cheese. Bon Appétit or as we say in Finland, hyvää ruokahalua!
